Buckeye Brownie Cookies

I came across this recipe on pinterest the other day and decided it was one I had to try! I love Christmas cookies and baking but I also love peanut butter and chocolate so I decided I would try these bad boys out! I am not the best baker in the world, cooking is more my thing. I am not known as the most patient person and baking generally means you need to be patient and preciseĀ Ā in your measurments ( I am not super good at that either) but these little guys were so easy, even I couldnt fail at them!

This recipe combines all my favourite things, gooey brownies, cookies and peanut butter! And its ridiculously easy!!

All you need is:

1 box of brownie mix

1/4 melted butter

1/2 brick of cream cheese

1 egg

1 cup peanut butter

1 cup icing sugar

1/2 cup melting chocolate

Preheat oven to 350 degrees

Mix the first 4 ingredients together until combined. This mixture will be sticky but thats ok. Scoop cookie dough onto ungreased cookie sheet and pat down to form a flatter ball. Bake in oven for 10-14 min and make sure not to overcook, you want them to be soft and gooey when all done.

Mix peanut butter and icing sugar and roll into 1 inch balls.

Once cookies are done remove Ā from oven and immediately press the peanut butter balls into your baked cookies. They will melt into the cookie as it warms it up.

Let cool for 5 min. then transfer to a wire rack and cool completely.

Warm up melting chocolate in microwave and drizzle on top of cookies.

The original recipe found at Tastes of Lizzy T’s called for Candiquik. However my local grocery store doesn’t carry this so I substitutedĀ Ā melting chocolate and they still tasted AMAZING.
