If you are anything like me, lunch time can be the hardest meal of the day to make healthy and nutritious as well as be something you look forward to eating, which is very important to me when it comes to ALL my meals! I love food. I want it to taste good but also be a healthy choice.
It also needs to be quick, because we are often on the go especially around lunch time and I don’t have time to make a huge meal, but I also need something filling to keep me going till supper. Thats where wraps come in handy. I love love love these wraps from Joseph’s Pita. They taste just like any whole grain tortilla but you guys they are only 70 calories EACH and have loads of fibre. I don’t eat a low calorie diet but if I can limit my calories in one food and add them back in something even better, like cheese, then sign me up! I’ve used them to make many variations of wraps and yesterday I made a mexican vegetarian fiesta in a wrap!
To make the filling add:
1/2 cup frozen or fresh corn
1/2 cup black beans
1/4 of a small red onion chopped
a handful of cherrie tomatoes halved
1/2 green pepper
2-4 tbsp of lime juice
1 tsp salt
chopped cilantro to taste
