Summer Vegetable Rigatoni

I am already getting nostalgic over summer and it isn’t even over yet! So for dinner I thought I would whip up a quick and simple pasta using some of my favourite summer vegetables from the garden…. or in my case grocery store because I do not have a vegetable garden. FRESH veggies would of course be ideal! This dish is perfect for families that have some vegetarians and some meat eaters. We all eat meat in our house but often my sister-in-law Heidi and I don’t feel like having meat and would prefer to go without for some of our meals, so I love dishes like this.

Summer Vegetable Rigatoni

1 box of pasta

1 jar of favourite marinara sauce ( I use presidents choice)

1 zucchini

1/2 cup of halved cherry tomatoes

1/2 red onion



tbsp butter

1/2 cup parmesan cheese

fresh thyme 

chicken breasts seasoned with garlic plus rub ( optional)

cook chicken and pasta per instructions on box

saute your diced summer veggies in a pan with 1 tbsp butter till soft and translucent (onions) and are starting to brown

toss veggies with pasta and warmed marinara sauce and season with salt and pepper

add in 1/2 cup of parmesan cheese

serve with garlic rubbed chicken and fresh thyme
