My husband and I have been doing really good with our healthy eating goals that we started just before Christmas! I have lost a total of 8 pounds, which for me is super exciting because they are those stubborn annoying last pounds that have taken me so long ( err 3 years) to get off. I have stuck to a clean eating diet and limiting my starchy carbs to 2 small servings a day, but when I needed something sweet I have been playing around with healthy dessert recipes ( Chocolate Covered Katie is my FAV) and am loving the results!
I came up with my own version of No Guilt Peanut Butter Pie but I must confess I did use a pre-made graham cracker crust HOWEVER you could easily switch out this not so great crust with a healthy version (I love this one) and this pie would be gluten free, insanely low on sugar ( I always prefer to use coconut sugar for its low glycemic index) and is filled with healthy fats ( good for your brains mama’s)
This would make the perfect healthy Valentine’s Dessert or what the heck even tomorrows breakfast
No Guilt Peanut Butter Pie:
1 cup natural peanut butter ( or nut butter of your choice)
2 cups of 2% greek yogurt ( this is what I used, try another yogurt if that’s what you have on hand)
1/4 cup plus 2 tbsp of coconut sugar
1/4 cup coconut oil melted
1/2 tsp salt
splash of vanilla
Mix in a blender ( I use Blendtec) till its really well mixed. This will be really really runny but that’s ok. Pour it in your pie shell ( with homemade or store bought crust) and let chill in the freezer till solid ( this took my freezer about 2 hours to do). I drizzled mine with some melted chocolate chips and topped with a wee bit o whip cream and chopped nuts, YUM.
