Around here I like to think of myself as the queen of granola. My husband eats a huge bowl of it every morning for breakfast so we go through it pretty fast and I like to keep him on his toes by switching up the flavours every time I send him off to work with a new batch. The base of this recipe is so simple, you can whip it up in 5 min flat and it is so much healthier and way more flavourful then a store bought granola!
Queen of Granola Recipe:
8 cups of steel cut oats ( do not substitute with quick oats)
2 cups of chopped nuts ( for this combination I used 2 cups of unsweetened coconut instead)
1 cup of raw seeds or Chia seeds ( sunflower seeds are also great)
2 cups of dried fruit ( I always switch this up, in this batch I used one cup raisins one cup dried cranberries)
Mix together in a big bowl
Now in a microwave or saucepan melt together
1/2 cup honey or agave or maple syrup
1/2 coconut oil or butter
1 tsp of vanilla or almond extract
2 large pinches of sea salt
Now dump this melted mixture into your dried mixture and stir together
Place on two baking sheets covered with parchment paper and bake for 30 min at 300 degrees F.
Let cool and store in an air tight container
